Oat cookies


Recently Betty has shown a real interest in baking so I thought I would round up some bits and get baking with her.I found a recipe for oaty cookies which looked quick and simple, a must when baking with a toddler!

Betty absolutely loved helping me measure out the ingredients and had even more fun mixing them together.



I would say it took about 5 minutes to get the ingredients sorted and mixed together and then 12 minutes to bake. Perfect!


Betty wasn’t too fussed about watching them cook and she actually isn’t that keen about eating them, I don’t think they are naughty enough for her. Me however, well I can’t get enough of them. They are a really nice sweet treat and perfect with a coffee. They contain oats so they are super healthy too. Ish.


I had to tweak the recipe slightly as my store cupboard wasn’t fully stocked. I say store cupboard but what I actually mean is my two Tupperware boxes full of baking essentials.

So here is the original recipe for you to use if you’d like to enjoy a quick bake activity with your little one.

Ingredients

110g butter

115g dark brown sugar (we used light brown)

1 egg

150g porridge oats

75g self raising flour

75g raisins (we didn’t include raisins)

A pinch of salt

1 teaspoon of vanilla extract

100g chocolate chips (we made a second batch and included fairly milk chunks, I can highly recommend doing that!)

Method

Preheat oven to 200.

Combine the butter and sugar until light and fluffy. Beat in the egg then slowly stir in the rest of the ingredients. Shape the mixture into balls and place on a lined baking tray. The mixture should make approximately 24 cookies. Be sure to leave enough space between each cookie as they do spread once in the oven. Bake in the oven for 12 minutes/until golden brown. They taste best the day after.

    These look so good Sarah! I did panic when I saw your photo they had raisins in which I really cant bare but nope they are nice and chocolately which totally suits me. Will have to give these a go with Amelia, I think we’ve got some porridge oats in the cupboard xx
